Ingredients
- 3 heirloom tomatoes cut into 1/2” wedges or 1-pint cherry tomatoes halved
- 1 green pepper, cored and sliced into strips
- 1 cucumber peeled, sliced in half lengthwise then cut into chunks
- 1 red onion cut into thin wedges
- ½ cup kalamata olives drained
- 1 cup feta cheese crumbled or cubed
- Salt and pepper to taste
Dressing
- 1/3 cup olive oil
- 1 tablespoon red wine vinegar
- 1 teaspoon oregano
- Juice of 1 lemon squeezed
- Salt and pepper to taste
Preparations
Put all ingredients in mixing bowl and mix thoroughly.
